In → Settings → In-Game Overlay → Settings (cog icon) → Recordings → toggle “Capture Cursor” off. (This does the same thing but via GUI.)

This occurs because of how Windows handles hardware-accelerated cursor layers versus software rendering. Shadowplay attempts to capture the "software" cursor while the game renders a "hardware" cursor. The result is a conflict that the default NVIDIA driver cannot resolve without a manual tweak.
